Recipes from Healthyish by Lindsay Maitland Hunt

This book was a hit with most participants. Several found the "ish" in the title to be appropriate, as these dishes do contain a fair number of rich ingredients alongside the Greek yogurt and whole wheat flour. We also took issue with some of the serving sizes, which were not intended for a crowd the size of our group! But all in all, a success.

Smoked Salmon on Rye with Dill-and-Caper Yogurt Schmear (Connie Spiros)

The chef substituted cream cheese for the yogurt, which she found to have an off-putting flavor.

Turkey, Apple & Brie Baguette (Bernadette Lundbohm)

Pesto Chicken Caprese (Kate Kibbee)

Loaded Baked Potato & Cauliflower Soup (Mary Alice Gallagher)

Cheesy Broccoli & Pea Soup (Lisa Courtney)

Miso Chicken Noodle Soup (Aonghus O'Nia)

Because it was for a group, the chef opted not to include the egg yolk (although the chef enjoyed it in the soup for his lunch the next day!).

Roasted Vegetable & Barley Bowls (Janet Evans)

The chef substituted quinoa for barley.
