Maya's Lamb Lasagna
"Instead of mixing the ricotta cheese into the sauce, I do what I always do when I make lasagna. 1 pound of ricotta +10 ounces of chopped cooked spinach drained, plus one egg. I mix this together and create an additional layer with this mixture, while assembling the lasagna. I enjoyed a birthday dinner with my husband after the zoom meeting last evening. We sprinkled feta cheese and this added to the flavor."
